Monday Menu

Breakfast: Scrambled Eggs, Sliced pear, Raspberries, yogurt
Snack: Halloween trail mix
Lunch: Denver Breakfast Burritos, grapes
Dinner: Broccoli Cheese Soup, fresh bread, sliced pears

Halloween Trail Mix
Peanuts
Candy Corn

Denver Breakfast Burritos
eggs
canadian bacon
bell pepper, choppped
onion, chopped
cheese
tortillas

Sunday Menu

Breakfast: Cereal, milk, bananas
Lunch: leftover Chicken & Vegetables over Brown Rice
Dinner: Cashew Stir fried vegetables, Pot stickers, and Brown rice

Cashew Stir fried Vegetables
Carrots, julienned
Onion
Celery
Broccoli
Green Bell Pepper
Yoshidas Terikayi Sauce
Cashews
About 1-2 cups of the above vegetables stir fried in a small amount of oil. Remove from heat, add 1/2 sauce and 1 cup cashews.
Serve over brown rice. Yum!

She's back!!!!

I haven't posted in almost three years! yikes. Please know that in the last three years I have continued to feed my family, I just haven't had the time to blog about it. We have been hit by some tough financial times like many others and I have been so grateful for the planning and saving and storing away of food for my family. We really have to tighten our belts and delve into our food storage instead of going grocery shopping. I have about $20 a month to buy groceries and will supplement the rest from the food we get from the Women's, Infant's, and Children's Nutrition program. It allows for us to get milk, beans, fresh fruits and vegetables, and whole grains and cereal. This has been a lifesaver for us because with me being pregnant and having three growing girls we have to make sure the quality of what we are eating is not diminished by our need to watch the bottom line. Each week I will post my menus for the week and include and recipes that I find. I am also working on putting some quick heat and eat meals up in the freezer for when I get closer to delivery and also for after the baby's birth. I will have special entries just for those recipes.
